In vitro research on gastric mucin may be related to the mechanism of gastric mucosal damage caused by Helicobacter pylori, leading to gastritis, peptic ulcers, and possibly gastric cancer. Gastric mucins are divided into two categories based on their histochemical properties. The first type is surface mucus cell type mucin, secreted by surface mucus cells. The second type is found in the deeper part of the mucosa, secreted by glandular mucus cells, including mucinous neck cells, cardiac gland cells, and pyloric gland cells. The unique O-glycan in gastric mucin seems to act as a natural antibiotic, protecting the host from Helicobacter pylori infection. Gastric mucin can protect the surface epithelium of the gastrointestinal tract by clearing oxidants produced within the cavity; However, it comes at the cost of sacrificing its viscoelasticity. Both natural and streptoprotease treated mucins effectively scavenge hydroxyl radicals, and there was no significant difference in their scavenging properties. For natural and streptoprotease treated mucins, the effective concentration of mucin required to reduce malondialdehyde production by 50% is 10 mg/mL.
